Blueberries Packed in Light Syrup: Blueberries, Water, High Fructose Corn Syrup.   • You Will Need: 2 large eggs, 1/2 cup water, 1/4 cup oil. 1. Prep: Preheat oven to 375°F. Grease muffin pans or line with paper baking cups. Rinse and drain blueberries thoroughly with cold water. Set aside. 2. Mix: Empty muffin mix into large bowl. Stir eggs, water, and oil into muffin mix until moistened (about 50 strokes). Batter may be slightly lumpy. Fold rinsed and drained blueberries gently into batter. Spoon batter into prepared muffin pans. Fill cups 2/3 full. Sprinkle topping over muffins before baking. 3. Bake: Bake in center of oven at 375°F 14-18 minutes until crumb topping is lightly brown. 6 Jumbo Muffins: 21-25 minutes. 12 Medium Muffins: 14-18 minutes. 36 Mini Muffins: 10-13 minutes. Cool 5-10 minutes. Gently loosen muffins before removing from pan. No Cholesterol Muffins: Prepare and bake muffins following directions above except using 4 egg whites or 1/2 cup egg substitute, 1/4 cup oil, and 1/2 cup water. High Altitude (Over 3,500 ft): Stir 2 tablespoons of flour into the mix. Mix as directed.
