  • You will need: 2-1/4 cups boiling water, 1/3 cup milk, 1 tablespoon margarine or butter.
  • Oven directions: 1. Heat oven to 450°F. Stir potatoes, sauce mix, boiling water, milk and margarine in 1 1/2-quart casserole. 2. Bake: Uncovered about 20 minutes or until tender (sauce will thicken as it stands). Refrigerate leftovers. Baking Tips: For 1 box, double all ingredients; bake in 3-qt casserole about 25 min. Bake potatoes and roast meat at same time: 325°F about 55 minutes; 350°F about 45 minutes; 375°F about 40 minutes.
  • Stovetop directions: 1. Heat: Potatoes, sauce mix, 2/3 cup milk and 1 tablespoon margarine or butter to boiling in 2-quart saucepan, stirring occasionally. 2. Reduce: Heat; cover and simmer 8-10 minutes, stirring occasionally, until tender (sauce will thicken as it stands).

        This is a great scalloped potato mix from Betty Crocker - it is creamy yet cheesy without being overwhelming. Goes great with simple grilled or broiled meats. I also prefer this when making a quick scalloped ham and potato casserole, since it is so flavorful. If you are making a roast for Sunday dinner or company, you can bake this in the oven, and it holds very well. If it looks like it is getting dry, all you have to do it add a little more milk to the casserole dish - please be careful that you are using an oven safe casserole and take the chill off refrigerated milk that you are adding by microwaving the additional milk for a few seconds to avoid extremes of temperature when adding additional milk to the hot casserole!
