For my version of Udon Noodle Soup, I've made the broth completely vegan so all of you can enjoy the unique taste of this traditional favorite. Delicious and healthy, this warming soup is filled with soft, fresh cooked (no dried!) Udon noodles, tofu, bok choy and shiitake mushrooms. - Ingredients: Noodles: Wheat Flour, Water, Tapioca Starch, Lactic Acid, Salt. Soup Base: Naturally Brewed Soy Sauce (Water, Wheat, Soybean, Salt), Shiitake Mushroom Extract, Seaweed Extract, Evaporated Cane Juice, Rice Wine, Yeast Extract. Toppings: Green Onion (Dehydrated), Maltodextrin, Bok Choy (Chinese Mustard; Dehydrated), Deep-Fried Tofu (Dehydrated), Red Pepper (Dehydrated), Shiitake Mushroom (Dehydrated), Guar Gum.
- Microwave: 1. Place noodles in bowl and pour a cup of hot water over the noodles to soften. 2. Using lid, drain water from noodles. 3. Add soup base and toppings to moistened noodles. 4. Add 1 to 1-1/4 cups of water and loosely cover lid. 5. Microwave on High for 1 - 2 minutes, until noodles are hot (Caution, bowl will be hot after microwaving). 6. Stir well and enjoy! No microwave? Add 1 to 1-1/4 cups boiling water to soup base, toppings and noodles. Cover with lid and let stand 2 minutes. Store in a cool dry place. Avoid direct sunlight.
